Pea, Ham, and Mint Soup

A nice smooth soup; very tasty. The recipe calls for mint but I've never included it.
Ingredients
- 600g frozen peas
- 20g fresh mint, leaves only
- 225g cooked ham, chopped/shredded
- 100g potato, diced
- 800ml stock
- 2tbsp olive oil
- 75ml creme fraiche
Method
- Heat peas, mint, ham, and potatos in the stock for 20 minutes.
- Remove from heat and blend until smooth.
- Season with salt and pepper; add olive oil and creme fraiche, then blend briefly before serving.
