- 15 carrots (~2lbs), peeled and quartered
- 3tbsp olice oil
- Preheat oven to 200°C (180°C fan).
- On a large baking tray, toss carrots with olive oil and season generously with salt and pepper.
- Roast until tender and lightly caramelised (~30 mins).
- Add 1tbsp white wine vinegar and 1tbsp honey for extra caramelisation.
